- 1 16-ounce package frozen shelled edamame, thawed
- 1/4 cup fresh lemon juice
- 3 tablespoons tahini
- 2 cloves garlic, peeled, trimmed and smashed
- ¼ cup extra-virgin olive oil, plus more for drizzling
- Water, ¼ - ½ cup
- Salt to taste

Put all ingredients except the water into the bowl of a food processor. Process until smooth, scraping down the sides of the bowl occasionally.
Add water, bit by bit, until the hummus reaches a consistency that pleases you.
Transfer to a serving bowl, drizzle with olive oil and serve with Popcorners for dipping!
